One of the blogs I read is I'm an Organizing Junkie, but I most often tune in on Mondays when over 300 Menu-Planners share what they'll be making for dinner that week. I've always been curious (nosy?) about how other families handle the infamous dinner hour- how they plan their menu, what they feed their families and what's their secret to getting healthy meals into their children.The secret for me to getting any kind of a decent dinner on our table has always been in the planning. I've just never been good at opening the refrigerator, pulling together whatever ingredients happen to be in there and producing something edible. For me, no plan equals no good dinner.
The problem is, it's SO easy for me to get out of the habit of planning our menu, even though I know it's what works best. It's best for our budget, our waistlines and our peace-of-mind, but with two little time-thieves running around it's easy for me to get side-tracked. So, perhaps, participating in the Menu Planning Monday will hold me more accountable to the goals I have set: Plan Menu for the Week, Make Grocery List, Buy Said Groceries, Make Dinners, Eat Happily. :-)
I promise this is NOT my way of flexing my culinary skills, it's just a way for me to say, "Yep, my menu is done and here it is." So, without further ado...Here it is:
Sun - Italian-style chicken roll-ups, Pasta, Peas, Grapes (this was SO good!)
Mon - South-of-the-border chicken and pasta skillet, Corn Muffins, Cantaloupe
Tues - Grilled Hamburgers, Steak Fries, Corn on the Cob & Strawberries
Wed - Creamy chicken pot pie, Salad, Cantaloupe or Strawberries
Thur - Leftovers and clean out the refrigerator
Fri - TBD: Grandpapa arrives...Not sure what fun concoction we'll have yet.
Sat - Dinner Club: We're bringing the dessert this time and it's a BBQ theme, so I'm planning to make Ice Cream Sandwich Pie (It's SO Good!!!)
